Moisture interaction plays a critical role in food quality, processability, and stability, directly dictating key attributes like crispness, flowability, and microbial safety. Understanding these moisture-material behaviours at varying relative humidities is essential for preventing unwanted texture changes, clumping, and premature spoilage. Dynamic gravimetric Vapor Sorption (DVS) serves as a premier analytical technique for measuring how raw ingredients and final formulations absorb and desorb moisture. By using high-precision microbalances to continuously record mass changes under precisely controlled environmental conditions, DVS delivers rapid, real-time insight into water-solid interactions that traditional loss-on-drying methods often miss.
In this presentation, Surface Measurement Systems will present an educational webinar based around the well-established technique of Dynamic gravimetric Vapor Sorption (DVS). This applications-oriented webinar will focus on the moisture sorption properties of food materials and its implications in process-development, pre-formulation and formulation development. In particular, practical examples of using the DVS for sorption mechanism determination and modeling, drying kinetics, caking, powder flow and vapor-induced transformations will be discussed. Finally, water vapor transmission rates (WVTR) and kinetic studies will highlight the DVS for packaging applications and shelf-life prediction.

Dr. Daniel J. Burnett is the Vice President for Surface Measurement Systems, NA, located at the North American headquarters in Allentown, PA. His team works on research studies and science applications for many prominent companies. He received his bachelor’s degree in Professional Chemistry from Eastern Michigan University in 1997 and Ph.D. degree in Chemical Engineering from the University of Michigan in 2001. Dr. Burnett has authored and co-authored over 25 papers in peer-reviewed journals and presented at numerous national and international conferences.
